We are starting January off right this year by partaking in Veganuary! Either it's every meal or just a few, making plant based changes this month is a great way to get creative in the kitchen.
This weeks Cooking for Peanuts begins with a breakfast bake to get you started for the month. It's easy, delicious and a great meal prep for a busy week ahead.
Ingredients:
- 1 1/2 cups oats
- 1 tsp baking powder
- 1/2 tsp salt
- 1 tsp cinnamon
- 2 ripe mashed banana
- 1/4 cup peanut butter
- 1 tsp vanilla extract
- 1/4 cup maple syrup
- Chia egg (1 tbs ground chia seed + 2 1/2 tbs water)
- 3/4 cups oat milk
- 20g Sea Salted Good Nuts
- 3 tbs jam
Recipe:
- Pre-heat oven to 180. Grease a small square baking tin.
- Mix mashed banana, peanut butter, vanilla extract, maple syrup and chia egg.
- Now combine wet mix with oats, salt, cinnamon and stir well.
- Pour into baking dish then sprinkle on Sea Salted Good Nuts.
- Bake for 25 minutes or until golden brown.
- Once cooled add jam and slice into portions.
