Cooking for Peanuts: PBJ Oat Bake

We are starting January off right this year by partaking in Veganuary! Either it's every meal or just a few, making plant based changes this month is a great way to get creative in the kitchen. 

This weeks Cooking for Peanuts begins with a breakfast bake to get you started for the month. It's easy, delicious and a great meal prep for a busy week ahead. 

Ingredients:

  • 1 1/2 cups oats
  • 1 tsp baking powder 
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 2 ripe mashed banana
  • 1/4 cup peanut butter
  • 1 tsp vanilla extract
  • 1/4 cup maple syrup
  • Chia egg (1 tbs ground chia seed + 2 1/2 tbs water)
  • 3/4 cups oat milk 
  • 20g Sea Salted Good Nuts
  • 3 tbs jam

Recipe:

  1. Pre-heat oven to 180. Grease a small square baking tin.
  2. Mix mashed banana, peanut butter, vanilla extract, maple syrup and chia egg.
  3. Now combine wet mix with oats, salt, cinnamon and stir well.
  4. Pour into baking dish then sprinkle on Sea Salted Good Nuts.
  5. Bake for 25 minutes or until golden brown.
  6. Once cooled add jam and slice into portions.
