This week on Cooking for Peanuts we have created a crispy tofu dish that is perfect for beginners. Our Hot Chilli Good Nuts not only add flavour but a crispy crunch to match the oven baked tofu. It can be partnered with noodles, rice or whatever you fancy! This is a great dish for meal prep as the tofu and peanuts give this dish a whooping 28g protein per serving.
Ingredients:
- Tofu
- Pak Choi
- 2 portions of rice or noodles
- 100g Hot Chilli Good Nuts
Chilli Peanut Sauce:
- 37.5g peanut butter
- 15ml sesame oil
- 30ml soy sauce
- 30ml maple syrup
- 2 tsp chili garlic sauce
Instructions
- Pre-heat oven to 200 degrees.
- Drain and dry tofu. Chop tofu into bitesize pieces and place on a baking tray. Then cook in the oven for 20 minutes or until golden brown.
- To make the sauce, mix peanut butter, sesame oil, soy sauce, maple syrup and chilli garlic sauce together.
- Next, in a medium heat pan add diced pak choi and cook until soft.
- To the pan add peanut chilli sauce, tofu and half crushed Hot Chilli Good Nuts then stir until the sauce is sticky.
- Serve up with rice or noodles and top with Hot Chilli Good Nuts!
